What's that smell?!

Oh, that amazing one coming from my kitchen?  Oh yes, that one.  It is.  Fresh bread.  Amazing.

Seriously.  Nothing smells quite this good!


My fav dairy-free easy-peasy sandwich bread recipe:
put in mixing bowl on mixer:
3 cups warm water
1.5 tbsp yeast
1.5 tbsp salt
2 tbsp sugar
1/2 cup melted butter (I use melted coconut oil)

Mix in 7 cups flour with dough hook (I add 5 cups, then mix, then another then mix and then the last and mix)

Cover with saran wrap and let rise to double size (about 2 hours)

at this point you can put it in the fridge covered for up to 7 days.

when ready to bake it, turn out dough, flour surface and cut off a 1.5 lb ball (abt size of cantaloupe)--makes  3 of these, so I just divide into 3 parts.
shape into a ball and then elongate it.  put in prepared loaf pan (i oil it with olive oil) and let set for 1 hr 40 min for refrigerated dough or 40 min for not-refrigerated dough.
preheat oven to 350.  when dough has rested, flour top and use knife to cut slashes in surface.  then brush with melted butter (I used rice milk once and nothing the other times and both were fine) and bake for about 45 min.  it browns fast so just know that, but it did take the full 45 min to bake!

let cool completely before slicing to get clean slices.

Amazing to smell, even more amazing to eat!!
